Carissaa Oreo Cheesecake Truffles Nov 8, 2007 8:20 AM These are amazing, and surprisingly simple! Ingredients: 1 package oreo cookies 1 8 oz. package cream cheese 1 package baker's semi-sweet chocolate To Do: Chop or crush the oreos until they are only crumbs. Mix in the cream cheese (softened at room temp.) Roll in to balls and chill. Melt the chocolate over a double boiler. (Glass bowl over pot of boiling water.) Dip the balls of cookie and cream cheese in to the chocolate, and let dry. Serve at room temperature. xoxo--Enjoy
Carissaa Fudge Nov 8, 2007 8:17 AM This is an easy Fudge recipe that I love. I use it each Christmas for gifts! Ingredients: 1 1/2 Cups of chips (peanut butter, Chocolate, white chocolate, butterscotch) 1 Can Sweetened Condensed Milk Any toppings you wish to have (see below for suggestions) To Do: Stir milk and chips over a double boiler (glass bowl on top of a pot with boiling water) until glossy. Add toppings Pour in to a pan and chill. Suggestions for toppings: If making Chocolate fudge-- try peanuts, marshmallows, crushed candy cane, toffee bits If making White Chocolate fudge-- I strongly suggest the crushed candy cane or crushed oreos. If making Peanut butter fudge-- I also suggest oreos Be Creative-- xoxo--enjoy
Carissaa Coconut Macaroons Nov 8, 2007 8:13 AM Makes about 4 dozen These are great for Holiday gifts, as well as for a party or something. This is also one of the most affordable, and easy cookies to make! Ingredients: 1 lb. Shredded Coconut 1 can Sweetened Condensed milk 2 tsp Vanilla To Do: Mix well. Drop by the teaspoonful on to a greased cookie sheet. Bake at 350 degrees for about 12 minutes.
Carissaa Asian food Themed party Nov 7, 2007 1:40 PM Everyone loves themed parties, so try this one out. I've come up with some amazing recipes that I've found and tried out. {They're fantastic} I have plenty of decoration ideas, as well. This party idea isn't really for beginning cooks, The instructions are easy, and self-explainitory, but if you don't want to spend at least 2 hours in the kitchen, then it isn't for you. You can easily substitute other dishes for these. The food: When throwing a party, it's nice to have some finger foods to start off with. I've found that using the Crunchified wonton crisps makes an easy starter for people to mingle over, or maybe drink with. For an appetizer, try these Mango Veggie Summer Rolls . They're a great, light starter, and can be made any time of the year with their ingredients. They're amazing, and so is the dipping sauce. For the main dish, try out this Asian Peppered Salmon . It's a great, healthy dish that could be paired with Steamed edimame, or steamed snow peas, or asparagus. Anything green, even a great salad, with ginger dressing would be good. All of these recipes serve 8, but they can easily be cut in half or doubled, accordingly. The invitations: Invitations could be a great personal touch. They can also go along with the theme. DIY invites are always good. Head down to your local craft store , and see what they have to offer you. Pick up some nice paper, or if it's too expensive, grab one sheet that you like, and photocopy it. Write the information on it, or print it out from the computer, and glue it on. Then you can add bows, glitter, or anything personal. Just make sure to have them RSVP, or if they're bringing a dish or something. I find it awesome to have everyone bring in a dessert. That makes it easier on you, and the best part of the meal comes in abundance. The Decor: Try some mood lighting with some great, inexpensive Paper Lanterns . They're cheaper than $5 each, from most places. Hang them strategically around the room. Have people sit at the coffee table, on cushions, to make it more real. Use some bamboo placemats, and chopsticks to eat. They are both also inexpensive, and can be picked up at Target , or even wal-mart . Use bright, mis-matched colors, this way it doesn't have to match, and it can have an eclectic feel. Carissaa Asian Pepper Salmon Nov 7, 2007 1:26 PM Makes 8 Servings Ingredients: 3/4 c. dried, unsweetened coconut 1/4 c. blanched almonds 2 tsp. coriander seeds 1 tsp. Szechuan peppercorns 1 tsp. sea-salt flakes 1 2-lb. Salmon fillet, skin removed. 2 tsp. Vegetable oil Lime Wedges To do: Preheat oven to 350 degrees. Line baking sheets with parchment paper. Spread coconut on sheets and toast it, then the spices, then the peppercorns, each separately. {Time varies from 5-15 minutes for each thing} Allow to cool, add the salt, and grind in a spice grinder. {you can use a rolling pin if necessary} Spread in to a shallow Bowl. Pat the fish Dry. Cut in to 8- 1 1/2 inch wide pieces. Brush with oil, then coat with the coconut mixture. Let stand for 30 minutes, until room temperature. Heat a grill pan until hot, and rub with oil. Add the salmon and cook for 4 minutes on each side. Remove from heat, and cool completely. Serve with lime wedges. xoxo--enjoy.
